When one walks into the jungle kitchen of ullal in Mangalore, the latest international pop up from chef Sharan, it doesn’t feel like a restaurant kitchen in the normal sense. Yes, there is mise en place being fervently undertaken. Yes, there are flames and edible things. But the intrusion of nature, in the forms of breezes and leaves; the palpable feeling of excitement as gargantuan fruits in tropical colors arrives.
